Happy tummies in the house as we are trying out some new breakfast recipes! This one got 2 thumbs up with a request to repeat soon (although lots of others to get through first!). It is yet to be titled, but the recipe called it an ‘Egg Fondant’ . A yummy mixture of mashed PEI potatoes, cheddar, chives and bacon, with an egg yolk nested inside, rolled in breadcrumbs and fried golden brown.
What do you think – would you order it? I had a hesitation and put only one on my plate assuming it would be filling and one would be enough…. I ate two 🙂
